Vinha d’alhos Prawns in White Wine Marinade

Experience a flavour explosion with this Vinha d’alhos marinade, featuring the perfect blend of white wine, garlic, and spices. Elevate your meal with these succulent Queen prawns, marinated to perfection.

Prep Time: 4 minutes; Cook Time: 6 minutes; Marinating Time: 20 minutes; Total Time: 30 minutes

Ingredients:

  • 2 tbsp. unsalted butter
  • 1 lb. (450g) Queen prawns, 31–40 peel-on, thawed
  • 3/4 cup white wine
  • 2 cloves of garlic, thinly sliced
  • 2 tbsp. sweet pepper paste
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. paprika
  • 1 tsp. hot sauce (e.g., Tabasco; adjust to taste)
  • 1/4 cup fresh flat-leaf parsley, roughly chopped

Instructions:

  1. In a small bowl or measuring cup, whisk together the white wine, garlic, pepper paste, salt, pepper, paprika, and hot sauce.

  2. Pat the prawns dry with a paper towel to remove moisture.

  3. Place the prawns in a bowl, add the marinade, and ensure they are evenly coated. Allow them to marinate for 20–30 minutes.

  4. Heat butter in a frying pan over medium-low to medium heat. Once the butter bubbles, add the prawns and marinade.

  5. Spread out the prawns and cook for 3–4 minutes until the bottom side turns red. Flip and cook the other side until red.

  6. Turn off the heat, transfer the prawns to a serving dish, and sprinkle chopped parsley over the top.

  7. Serve with crusty bread to soak up the flavorful sauce. Enjoy!

Recipe Notes:

  • For quick defrosting, place frozen prawns in cold water and pat them dry with paper towels.
  • Adjust cooking time based on prawn size.
  • Peel-on prawns enhance flavour, but peel-off works well too.
